A message about my health...
Learning how to keep myself healthy has been a part-time job. I envy those who can function well when eating 'whatever', and it is likely that those lucky folks may find it very hard to conceive of my limits and may even feel I am overly concerned. (But I guarantee not one would question my vigilance, if in my skin.) After working very hard to learn 'new rules' over the last two years (and they keep evolving and becoming honed) I am happy to report that I continue to have improved health in all ways.*
Allergies: (An allergy is, by definition, something that effects the immune system. Here are mine.)
Pork, Gluten/Wheat, Cow Dairy, Corn (small amounts of corn are ok),
I also avoid most peanuts, Kidney, Navy, lentil beans (for varied reasons such as digestion, etc)
ALSO I have an allergy to :
Aluminum (I now use parchment paper instead of Aluminum foil, and glass instead of aluminum pans/pots.)
Severe Pork Allergy - for most of my East Coast friends, this one is easy ... but suffice it to say that even the itty bittiest amount of pork in ANY form - lard, bacon, bacon fat, ham, or juice from any - and my immune system grinds to a halt.
My hope and intention is that as I improve my health, the hypersensitivity to foods will decrease. But as they say, it didn't take me just two years to get to this level of dis-ease, so it is likely to take more than that to reverse it.
What do I eat?
I do eat meat now - grass-fed/ free-range if I can. (Chix, and Fish still)
I love greens - such as Kale, Collards, spinach
Goat & Sheep cheeses, Goat Yogurt
Adzuki and cannellini beans, black-eyed peas
I eat most veggies except cauliflower
I eat fruits though not the ones high in sugar (I no longer eat oranges much, or OJ, or over-ripe bananas)
I eat Almonds, Walnuts, prunes and figs, sunflower seeds
grains: Quinoa, Amaranth, Millet, some oats, rice, teff, Sorghum
There is ONE (only found one so far) source of excellent pasta Tinkyada - even pasta aficionado's like this one.
and Udi's gluten-free bread is almost like the 'real thing'
* What has improved over the past two years with this high concentration and attention on my health and diet?
Unbeknownst to me, I had been having allergic reactions to gluten for 25 years and cow dairy since I was born. Eliminating these two major things has improved my health immensely! However, the system was compromised for so many years that it's still needing lots of correction, and nutritional support. Also, the immune works in concert with the endocrine and the nervous systems, so these have been thrown off balance. These immune affecting allergies caused extreme/chronic fatigue, body pains, depression, painful periods, neck and muscle aches, skin breakouts, even bleeding gums and a regularly coated tongue. All of these have been eliminated, reduced or at least improved! I am very grateful for this, and though I don't expect others to take these details so seriously, I know you can respect my attentiveness.
